Veggie and herb omelettes with cheesy vegan sausage

This vegan sausage pancake will win over young and old alike. Hearty, vegan sausage pieces with vegetables, herbs and vegan cheese sauce make this omelette a versatile flavour experience. Mmmm, enjoy now!

Preparation

Mix all the dry ingredients for the omelette.
Chop the vegetables or herbs finely. Now add the water, soya drink and vegetables or herbs to the flour mixture and mix everything with a spoon to form a batter. Cut the vegan sausages into 8 mm rounds.
Heat a non-stick frying pan over a medium heat. Now spread half of the batter in the pan to form an omelette. Cover the omelette with the sausage wheels and press them down lightly. Place the lid on the frying pan and bake for 5-8 minutes over a medium heat.
Spread half (50 g) of the No Moo, Pizza Sauce on the unbaked side of the omelette, i.e. over and between the sausage links.
Turn the omelette over and fry the cheesy side for 5-8 minutes. Repeat the process for the second omelette.

Serve with a nice salad of beetroot, apples, walnuts, red onions and a little date mustard.
