Spicy lecho with vegan smoked sausage

Lesco (pronounced Letscho) is a recipe that is not stingy with spice! No wonder it originally comes from Hungary. Ideal for an uncomplicated meal. Lesco is also easy to freeze.

Preparation

Wash and remove the seeds from the peppers and cut into thin strips. Wash and dice the tomatoes.
Heat the oil in a pan and sauté the chopped onions.
Then stir the paprika powder into the oil and onion mixture. Deglaze with the water.
Add the prepared peppers and tomatoes, cover and cook at a medium heat for 35 minutes. Stir the vegetables from time to time. Add 1-2 tbsp of water if necessary.
In a separate pan, cook the rice according to the pack instructions.
Cut the vegan sausages into thin slices. Fry the sausage slices in a pan with the oil for 1-2 minutes. Then put the pan with the vegan sausage slices to one side.
Season the lecho with salt and Tabasco.
Mix the rice and the fried vegan sausage slices with the Lesco. Season the dish again with salt and Tabasco to taste.

It goes well with a fresh seasonal salad.
