20 round rice wrappers (Asian shop)
1 bunch peppermint leaves (Asian shop)
1 bunch Thai basil (Asian shop)
100 g cooked rice noddles
100 g mung bean sprouts
1 carrot, chopped
4 Tbsp peanuts, roasted
Lime-dressing:
1 organic lime (juice and pulp)
5 Tbsp rice vinegar
2-3 Tbsp agave syrup
1 small chilli pepper, cored, finely chopped
1 cm piece ginger, finely chopped
small piece carrot, grated
rock salt
100 ml warm water
Hoisin-sauce:
4 Tbsp Hoisin sauce (Asian shop)
3 Tbsp peanuts, unsalted
vegetable oil for sautéing
2 garlic clove, finely chopped
2 small chilli pepper, cored, finely chopped
125 ml water
1/2 tsp sugar, salt
small piece carrot, chopped into match stick size
