Filled Schnitzel à la Vegusto

Schnitzel like no other! Filled with Smoked Sandwich Slices and No-Moo, this special dish is a delicacy for the whole family.

Preparation

With a sharp knife cut the veggie schnitzels crosswise and gently open like a book keeping one side sealed. Don't worry about small holes while cutting, because the veggie schnitzel will be breaded later.
Spread 1 tablespoon No-Moo Sauce inside each veggie schnitzel. Then put two Smoked Sandwich Slices and 2 tablespoons grated No-Moo Melty inside the pocket. Close the two folds of the Veggie Schnitzel.
For breading prepare two shallow bowls: one with bread crumbs and the other with a soy-cream-flour mixture. For the soy-cream-flour mixture mix together salt, pepper, flour and nutritional yeast flakes. Mix well by whisking with a fork.
Immerse the Veggie Schnitzel in the soy-cream-flour mixture. Then turn the veggie Schnitzel in bread crumbs and pat lightly. The veggie Schnitzel should be completely covered with bread crumbs.
Sauté the filled veggie schnitzel in a frying pan with oil over medium heat. Fry on each side until the crust is golden (5-8 minutes).
Drain the filled Schnitzels on a paper towel.

As a side dish we recommend roasted potatoes and steamed vegetables.
