With the gluten flour from Vegusto, you can make homemade savoury seitan treats in no time. The result tastes great, is cheap and can be used in any way you like.
Ingredients for 4 Pieces
80 g Seitanfix (gluten powder) [Order No: 307]
20 g spelt flour
100 g water
25 g sunflower oil
10 g soy sauce / tamari [Order No: 321]
10 g nutritional yeast flakes [Order No: 302]
5 g garlic powder
3 g paprika powder
2 g rock salt [Order No: 305]
Preparation
In a bowl, mix together the seitan fix and the spelt flour.
Mix all the other ingredients in another bowl.
Now gradually add the seitan-spelt flour to the oil-water mixture, stirring with a spoon. As soon as the mixture starts to stick more, continue kneading by hand. Shape the dough into a ball.
Cut the dough ball into 4 parts using a knife. Pull/beat each part by hand into 2-3 mm thin seitan shreds. Make sure that the edges are not too thick.
Stack the seitan cutlets on top of each other. Place a piece of baking paper between each schnitzel.
Place the steamer insert in the pressure cooker with some water. Place a piece of baking paper on the steamer insert. Place the stack of cutlets on top and close the pressure cooker. Cook the seitan cutlets for 25 minutes on a high setting (2nd red ring).
The seitan cutlets are now ready to enjoy or to freeze as a stock.
It is also very tasty to tear the seitan cutlets into pieces and fry them with a little oil, garlic and spices. This way you quickly have a homemade gyros.
This basic recipe gives a medium-firm consistency. If you need a firmer consistency, use less wheat spelt flour and replace it with Seitanfix.
