Delicious nectarine salad with No-Moo, Black Pepper

With this festive starter we immerse ourselves in southern delights: sweet nectarines, with melt-in-the-mouth No-Moo, Black Pepper accompanied by almonds, rocket and basil.

Preparation

Roughly chop the nuts and toast them with a drop of olive oil in a frying pan.
Pour the white wine into a small pot and reduce it by half while boiling.
Now add the xylitol, mustard, olive oil and lemon juice and use a whisk to stir everything into a consistently smooth salad dressing.
Season the sauce with a pinch of salt and a little pepper from the mill.
Halve the nectarines, stone them and cut into thin slices.
Place the nectarines, nuts, chopped onions and basil in a bowl.
Now pour the still warm dressing over it and let it steep for 2 minutes.
In the meantime, arrange some rocket leaves and nectarine salad on each plate.
Just before serving, take the No-Moo, Black Pepper out of the fridge, cut it into pieces and arrange it on the nectarine salad.

Hard nectarines ripen faster if they are stored in a paper bag together with an apple.
