Surprise croquettes with No-Moo, Golden and more

These croquettes are not fried, but baked in the oven with only a few ingredients.
Both young and old can get stuck in with the preparation. This way, everyone's personal favourite filling is guaranteed!

Preparation

Place the water, the polenta and the salt in a saucepan then cover and bring to the boil.
Let it boil for 2 minutes and then take it off the hob. Let the polenta soup cool down a bit.
Coarsely grate the No-Moo, Golden and add it to the polenta soup together with the oregano.
Now stir in the potato flakes. Season the mixture with pepper and salt to taste. Knead everything well.
While the potato mixture continues to cool, peel the veggie sausages and cut them into 3 cm pieces. Halve larger sausages lengthways.
Divide the potato mixture into 60–70 g portions.
To make the croquettes, press one portion flat on the palm of your hand for each one.
Now place the veggie sausage in the middle, wrap it up in the mixture and shape everything into a croquette.
Place the finished croquettes on a baking sheet lined with baking paper.
Preheat the oven to 180°C (fan oven).
Bake the croquettes for 30 minutes until they are crispy on the outside.
Serve the croquettes with mustard, ketchup or Vegi-Dip, Garlic, for dipping. Seasonal vegetables such as asparagus or beans also go well with this.

The croquettes are great fun at Easter because they can be easily cracked by hand like eggs.
